Maryland FAQ

Do you deliver in Maryland?

Yes. Elhaj builds food trucks and trailers in Manassas, Virginia, and we deliver directly to locations throughout Maryland. Delivery includes a full hand-off so you know how to operate and maintain your new unit.

Do I need a commissary in Maryland?

Yes, most food truck and trailer operators in Maryland must have a base of operations (often called a commissary). The commissary provides potable water, wastewater disposal, dry storage, refrigeration, and utensil washing facilities. The only limited exception is for certain prepackaged frozen dessert operations. Each county’s health department will ask for commissary details when you apply for your license.

Can I operate in multiple Maryland counties with one license?

Maryland allows mobile food units to apply for what’s called a Mobile Reciprocity License. This program lets you operate in counties outside of your “home county” license without going through a full new plan review each time. You’ll still need to apply for reciprocity and pay a fee in each additional county.

What inspections are required besides health?

In addition to health department licensing, most Maryland counties require a fire marshal inspection. This inspection covers hood suppression systems over fryers and grills, Class K fire extinguishers, propane or LP gas connections, and electrical safety. Some counties, like Anne Arundel and Frederick, also require annual fire re-inspections.

What licenses are needed in Baltimore City?

If you want to operate in Baltimore City, you’ll need a Baltimore City Health Department food license for your truck or trailer. In addition, Baltimore’s Department of Transportation regulates the Street and Mobile Vendor Program, which issues location-based vending permits. These rules are separate from county regulations elsewhere in Maryland.

How long does a build take?

The build timeline depends on your specific layout, equipment needs, and season. A standard trailer build may take a few months, while a fully customized truck with specialty equipment can take longer. When you request a quote, we’ll give you a timeline tailored to your build.
